Lemon Cookies Sugar Free

1 1/5 cups cake flour6 tbsp splenda1 1/2 tbsp grated lemon peel1 tsp baking powder4 tbsp trans free margarine (i used smart balance buttery spread)2 egg whites1 tbsp 100% unsweetened lemon juice
in food processor (or blender) , combine flour, splenda, lemon peel and baking powder.
Add margarine and pulse until crumbs form
add egg and lemon juice and process until a dough forms
form dough into a ball covered with plastic wrap and refrigerate for 1 hour or until firm (this is optional but it helps because the dough is very sticky!)
Coat baking sheet with cooking spray and place 1 inch balls 1 inch apart and bake for 10 minutes.
Makes 24 cookies
