Turnip Greens Soup

Ingredients
2 slices bacon or pancetta (I use low sodium bacon)1 cup turnips (fresh or frozen) cut into cubes1 large bunch turnip greens (washed and chopped) yield about 3-4 cups1 cup shredded carrot1 large onion, chopped3-4 cups of chicken broth (recipe is using College Inn fat free)2 cloves garlic, chopped1 Tbsp Extra virgin olive oil1 tsp salt, or to your taste1 Tbsp black pepper
Directions
1. Remove greens from the turnips, if necessary. Wash and rinse the greens and cut them into thin strips. Set aside.
2. Peel turnips and chop them into small chunks. (I used frozen cubes)
3. Peel and finely chop onions and garlic
4. Heat oil in a medium pot over medium high heat. Add bacon, and cook until it starts to render its fat. Add onions, sprinkle with salt, and cook, stirring occasionally, until onions are soft, about 3 minutes.
5. Add garlic and cook, stirring, until fragrant, about 1 minute.
6. Add chopped turnips and broth. Bring to a boil. Reduce heat to maintain a steady simmer and cook until turnips are tender, 8 to 10 minutes.
7. Stir in turnip greens and cook until greens are tender, about 2 minutes.
8. Taste soup and add salt to taste. Serve soup hot, garnished with black pepper, if you like.
