Gluten free Vegan Banana Bread

Ingredients
1.5 cups mashed banana1.25 cups brown sugar.5 cup vegetable oil2t gluten free baking powder1t mixed spice1t cinnamon1t nutmeg2.5 cups shredded coconut1.45 cups LSA (flax fibre)
Directions
Preheat oven to 180/350.
Grease a loaf pan and coat with some coconut, shake out excess.
Combine banana, sugar, oil, baking powder and spices in a large mixing bowl, stir in coconut and LSA.
Spread mixture into the pan and spread out evenly.
Bake for 55 minutes, stand for 10 minutes then turn out to cool.

Slice into 10 slices. Stores in the fridge for a week.
