Pumpkin Muffins with coconut flour

Ingredients
3 eggs2 tbs butter or coconut oil, melted1/4 cup pumpkin (i use libby's canned pumpkin)1/4 c brown sugar20 drops liquit stevia1/2 tsp pumpkin pie spice1/4 tsp salt1tsp vanilla1/4 c sifted coconut flour (measure before sifting)1/4 tsp baking powder
Directions
preheat oven to 400 degrees F, makes 6 muffins
Blend together, eggs, ild, pumpkin, sugar, spice, salt and vanilla. combine coconut flour with baking powder and whisk into batter until there are no lumps. pour batter into greased muffin cups. Bake for 18 minutes
