asian chicken adobo

Ingredients
3 chicken breasts, halved1 large onion, sliced1/2 apple cider vinegar1/2 low sodium soy sauce2 Tbs agave nectar5 cloves garlic, crushed or slicedLarge head of bok choy, cut into strips or bite sized piecesPut everything but the bok choy into slow cooker. Cook on low for 7-8 hours, or high for 4-5 hours. If cooking on low, increase to high about 10 minutes before done. Fold in bok choy about 5 minutes before finished and cook till tender. Serve over brown rice or quinoa (not in nutritional calculations)
