fresh roasted corn, red bell peppers, jalapenos, parsley, cilantro, oregano, spices
Roast corn on grill. Once cool cut kernels from cob. Place in bowl. Add diced red peppers, sweet onion and jalapeno. Add rough chopped parsley and cilantro. Add more or less to taste. Drizzle on olive oil, vinegar and spices. Mix well. Adjust seasonings to taste. For an extra kick add a few splashes of hot sauce.
