Cassie's German Blender Pancakes

Ingredients

4 tbsp whole wheat pastry flour2 tbsp sugar1/2 cup mashed ripe banana3/4 cup non-dairy milk (nutritional info based on unsweetened soy)pinch saltcooking spray
1. Add pastry flour, sugar, banana, non-dairy milk and salt to blender and blend on high until well-mixed. Allow to sit for a few minutes to remove any frothiness.
2. In the meantime, heat a non-stick skillet over medium.
3. Once pan is hot, spray with small amount of cooking spray and pour 1/4 of batter.
4. When the edges are golden brown, gingerly lift and flip the pancake over and cook for another minute until heated through. (Resist the urge to flip too early, as you will end up with a wrinkled, albeit still delicious, pancake.)
5. Repeat steps 3 & 4 to make the 3 other pancakes. Keep warm in a 200 degree oven until ready to serve. Serve alone, with maple syrup, or rolled up with a filling (like strawberry preserves).
