Ingredients
2 Tbsp Almond Flour or Almond Meal1/2 tsp Baking Powder2 Splenda packets or 1/2 tsp granular Splenda1 tsp Cinnamon1 lg egg1 tsp Vanilla1 tsp. Smart Balance Light Butter Spread, softened
Directions
Mix all ingredients well in a small bowl. Place in a ramekin and microwave on high for 1 minute.

    quite quick and easy--love that you can make just one. Not pretty (looks like a brown sponge swollen twice the size of the ramekin), but surprisingly tasty. My daughter said she could taste the low-calorie-ness, but I enjoyed it. Next time I'll use half the baking powder so it doesn't rise so much. - 6/18/11
