Pork Chops w Mustard Cream Sauce

4 boneless center-cut loin pork chops 1/2 inch thick1/2 teaspoon pepper2 teaspoons olive oil1/2 cup fat-free, less-sodium chicken broth2/3 cup lite sour cream1 tablespoon Dijon mustard2 teaspoons lemon juiceChopped fresh parsley (optional)
1) sprinkle both sides of pork with pepper.
2) heat a large skillet over medium-high heat. Add Olive Oil, add pork and cook 4 to 5 minues on each side or until lightly browned and done. Transfer pork to a serving plate, and keep warm.
3) Add broth to pan, scraping pan to loosen browned bits. Stir in sour cream, mustard, and lemon juice. Reduce heat and simmer, uncovered, 6 minutes or until sauce is slightly thick. Spoon sauce over pork; sprinkle with parsley if desired.
Yield: 4 servings ( 1 chop and 2 tablespoons sauce)
