High Fibre Banana Muffins

Ingredients
1 C Flaxseed ground1 C Whole wheat flour1 C Spelt Bran1 C Dark brown sugar2 tsp. Baking Soda1 tsp. Baking Powder1/2 tsp Salt4 medium bananas (mashed)3 Egg whites, 1 yolk3/4 C skim milk1 tsp. vanilla extract
Directions
Mix dry ingredients in large bowl. Add mashed bananas, milk, vanilla extract, egg whites and one yolk. Stir until well moistened. Using a silicone muffin pan (cupcake liners will stick), Each muffin uses just under 1/4 C. of batter. Bake at 350F for 25 - 30 minutes or until tops bounce back when pressed. Makes 24 small muffins.
