GF Sweet Salmon Bites

24oz Salmon fillet, no bones or skin1cup Honey (or Agave syrup)1/3cup Soy sauce (Gluten free or regular)1tbsp Black pepper, freshly groundVegetable oil (spray is fine)
Cut salmon into bite sized cubes. Combine honey and soy sauce in a bowl. Add the salmon, making sure the fish is fully immersed in the marinade. Cover and refrigerate for 24 hours. The marinade will partially cook the salmon, so don't be surprised if the salmon seems tougher the next day!
Before cooking, preheat oven to 500°F. Lightly grease a cookie sheet or aluminum foil sheet with oil. Place salmon cubes on the sheet and sprinkle with pepper. Cook in oven for 3 to 5 minutes, depending on thickness of cubes.
Serve warm. Makes about 6 servings.
