MK Purple Power Beetroot Salad

1 raw beetroot, grated1 raw carrot, grated1 green apple, grated or finely julienned1 cup shredded purple cabbage1 tbsp grapeseed oil (or other mild oil)2 tbsp cider vinegar2 tsp lemon juice2 tbsp sunflower seeds, unsalted (raw)pinch salt
Mix all shredded veggies/fruit in a large bowl. Add the other ingredients and stir well to coat. Let sit in the fridge an hour for best results - the whole thing will turn purple.
