Spicy Citrus Asian Style Chicken

1 lb chicken breast tenders1/2 cup sugar free orange marmalade1 tbsp reduced sodium soy sauce2 tsp rice vinegar2 tsp lemon juice2 tbsp pineapple juice1 tsp ground ginger1/2 tsp garlic powder2 tsp red pepper flakes1/8 tsp orange extract
Cut the chicken tenders into 1 inch cubes and put in a shallow glass pie plate.
In a medium microwaveable bowl, add the sugar free orange marmalade. Microwave for 20-30 seconds, just to loosen the marmalade.
Then add all other ingredients. Whisk together and pour over the chicken. Turn chicken to coat well. Cover the plate with tin foil or plastic wrap and refridgerate for at least an hour.
Bake in a preheated 375 F oven for 25-30 minutes or until chicken is done. Garnish with fresh green onions.
Serves 4. (great with a side of brown rice and steamed aisian veggies!- calorie content not included in this recipe)
