Skillet Lasagna with Vegetables

Ingredients
1/2 pound hot Italian turkeysausage, casing removed1/2 pound 93% lean ground turkey2 stalks celery, sliced1/3 cup chopped onion2 cups marinara sauce1 1/3 cups water4 ounces uncooked bowtie pasta1 medium zucchini, halved lengthwise & cut into 1/2" thick slices (2 cups)3/4 cup chopped green or yellow bell peppers1/2 cup reduced-fat ricotta cheese2 Tbsp finely shredded Parmesan cheese1/2 cup (2 oz) shredded part-skim mozzarella cheese
Directions
1. Cook & stir sausage, turkey, celery & onions in large skillet over medium-high heat until turkey is no longer pink. Stir in marinara sauce & water. Bring to a boil. Add pasta; stir. Reduce heat to medium-low; cover & simmer 12 minutes.

2. Stir in zucchini & bell pepper; cover & simmer 2 minutes. Uncover & simmer 4 to 6 minutes or until vegetables are crisp-tender.

3. Meanwhile, combine ricotta & parmesan in small bowl. Drop by rounded teaspoonfuls on top of mixture in skillet. Sprinkle with mozzarella. Remove from heat; cover & let stand 10 minutes.
