Thai Peanut Chicken - Slow Cooker (from 1 year of slow cooking)

Ingredients
1 1/2 lbs boneless skinless chicken breast or tenderloins cut into pieces2 small onions quatered (or 1 onion and 1 red bell pepper)1/2 cup peanut butter (smooth or chuncky).25 cup of lime juice.25 cup of soy sauce.5 cup of chicken broth1 tbsp cumin
Directions
Put all of these items in the slow cooker (I put a slow cooker liner in mine - if you don't do this it would be a good idea to spray it with a little cooking spray before putting in the ingredients). Stir. Cook on low for 6 to 8 hrs.

    I love this dish. I zip it up with curry powder and red chilli flakes. I double the sauce and add frozen stir fry veggies then serve over brown rice - 12/7/15
