Ingredients
2 Medium squash thin and long instead of short and fat1 jumbo egg1/2 cup parmesan cheeseSalt and peper to taste
Directions
Thinly cut the squash to about 1/4 inch slices dip the squash into egg then into the cheese and fry in a skillet of med hot oil until golden brown, and enjoy.

    wonderful but I very seldom fry - I put mine on a broiler pan - baked for 10 minutes - then on broil for 4 min to get the crisy top. I will spray the pan next time or use tinfoil! very good though - 9/23/11
