Sweet and Sour Chicken

Ingredients
4 large chicken breasts, cubed3/4 cup cornstarch3 eggs1 1/2 cup sugar1/2 cup vinegar1/2 cup ketchup1/2 cup chicken broth2 tsp soy sauce1 Tbsp oil
Directions
Place chicken in ziploc bag with cornstarch. (add enough cornstarch to thoroughly coat chicken.) Beat eggs slightly. Combine chicken and eggs in a fry pan with 1 Tbsp oil. Cook until lightly brown. Place chicken in 9x13 glass dish. Combine sauce ingredients and pour over chicken. Cover with foil and bake at 350 degrees for 1 hour. Turn chicken once half way through. Take foil off last 15 minutes. Serve over brown rice with stir fry veggies. Serves 8.
