Chicken in Red Wine Sauce

1 Tbsp olive oil1 Tbsp garlic minced4 chicken breasts, cut in half to make 8 pieces1 Tbsp paprika1/2 cup brown sugar3/4 cup red winesalt and pepper to taste
Heat oil in large skillet over medium high heat. Cook garlic in oil until tender. Place chicken in skillet and cook about 5 minutes on each side. Sprinkle chicken with paprika (and salt and pepper to taste) and the brown sugar; put back in skillet and brown for 1-2 minutes on each side. Pour red wine around chicken. Cover and simmer about 20-30 minutes; lightly baste chicken with wine sauce while cooking.
Makes 8 servings: each serving is a piece of 4 ounce chicken breast plus 1/8 of the sauce.
Serving suggestion: remove chicken from skillet and thicken sauce with 1 Tbsp cornstarch then serve as gravy over mashed potatoes.
For a slightly different variation, try replacing 1/4 cup of the wine with chicken broth.

I was trying to look for a recipe to use up some leftover wine and I came across this recipe. I had all the other ingredients on hand so I went for it. The chicken and the wine sauce was delicious.
