Vegetable & Rice Stir Fry

Ingredients
1 Tbsp. Extra Virgin Olive Oil2 Cups White Rice2 Cups Chopped Broccoli1 Cup Sliced Green Bell Pepper1 Cup Sliced Red Bell Pepper1 Cup Chopped White Onion2 Large Zucchini2 Large Squash
Directions
Heat oil in Large Wok or Skillet over medium heat. Sautee Vegetables until golden brown or at desired texture. Meanwhile make rice in another pan. When vegetables are at desired texture stir in rice. You can top it off with some soy sauce or teriyaki sauce.

    When I make it I will use brown rice instead of white rice. I have gotten used to brown and it is healthier I think. (just my opinion and taste) - 1/4/08
