Salmon Croquettes

Instant mashed potatoes, 2 cup Keta Salmon, 2 cup (10.5 oz), flakedOnions, raw, .5 cup, chopped Progresso Bread Crumbs - Italian Style, 0.25 cup Extra Light Olive Oil, 3 tbsp
Mix first 3 ingredients. Add seasoning to taste (salt, pepper, garlic, whatever) if the salmon is not already seasoned enough. Add enough bread crumbs to the mixture to make it stiff but not dry. Form patties from 1/4 c of mixture. Coat the sides in the rest of the bread crumbs. let rest in the fridge after forming for 15-30 minuets.
Heat the oil in a skillet over medium. Fry in the oil until cooked through, turning once. If they must be done in batches, add a little more oil between them to re-coat the pan. (This recipe reflects starting with 2 T and adding 1 more T between batches). Yummy!
A serving is 1 croquette.
