Pumpkin Oatmeal Raisin Muffin

Ingredients
Gold Medal Whole Wheat Flour, 1.5 cup Quaker Oats Old Fashioned Oats, 1 cup Pumpkin, canned, without salt, 1 cup Milk, nonfat, .75 cup Egg substitute, liquid .25 cup Applesauce, unsweetened, .33 cup Baking Powder, 1/2 tspBaking Soda 1/2 tsp Raisins, .5 cup (not packed) Brown Sugar, .5 cup, packed NutmegCinnamonCloves
Directions
Combine milk and oats and let soak. Measure out and mix dry ingredients except raisins. Combine the remaining wet ingredients with the oats and milk. Add wet ingredients to dry. Do not overmix. Fold in raisins. Spoon into muffin cups. Makes 12 muffins.

Note: The oatmeal in these makes the texture a bit different than a normal muffin. These are more of a "breakfast on the go" type muffin that I pair with a greek yogurt to get the day started.

    Love it ! Used extra pumpkin instead of applesauce, added pecans, and subbed truvia baking blend instead of brown sugar. Still yummy! - 1/11/13
