1/4 cup all-purpose flour1/4 cup whole wheat flour1/2 tablespoon wheat germ1/4 teaspoon salt1/4 teaspoon cinnamon¾ teaspoon baking powder1/4 teaspoon baking soda1 egg white1 tablespoon honey1/4 teaspoon vanilla1/2 cup buttermilk1 T butter, melted
1. In a large bowl, sift together the all-purpose flour, wheat flour, wheat germ, salt, cinnamon, baking powder and baking soda.
2. In a blender, purée the egg white, honey, vanilla, buttermilk and melted butter until thoroughly combined, about 30 seconds.
3. Gently whisk the dry and liquid ingredients together to form a batter.
4. Heat a griddle or large skillet over medium-low heat. Grease the surface, then ladle batter to form each pancake. Depending on the size of your pan, you may need to do this in batches. Cook until puffed and golden brown, about 1 1/2 to 2 minutes on each side.
