Vegan Cornbread Muffins

Ingredients
1.5 cups Very Vanilla Soymilk1.5 T distilled white vinegar1 c cornmeal1 c flour3 T sugar.5 t salt1 t baking powder1 t baking soda2 T canola oil
Directions
Makes 9 muffins.

Preheat oven to 425 F. Lightly spray muffin tins with nonstick spray.

In a small bowl, combine milk and vinegar, and set aside.

Mix the cornmeal, flour, sugar, salt, baking powder, and baking soda in a large bowl. Add the milk and vinegar to the mixture, then the oil. Stir until just blended. Fill 9 muffin tins. (Fill any non-used tins with water.) Bake until tops are golden brown, 15 - 18 minutes.

    I might try this and add a can of corn (so I can fill up the other three tins =) - 5/26/11
