Palak (Raw Creamed Spinach Curry)

Ingredients
1/2 C macadamia nuts2 Tblsp lemon juice1 Tblsp coconut oil1 inch fresh ginger root1 clove garlic4 C chopped raw spinach1/2 tsp. sea salt1/2 tsp. nutmeg1 tsp. curry powder1/4 C chopped raw onion
Directions
Put all ingredients into a food processor and blend until creamy. The mixture may remain a tad chunky, but is still good that way.
