Chicken & Cheese Enchilada Mix

Re-fried beans, Velveeta, Salsa, Canned Chicken
Directions
Mix ingredients in a large bowl.

For making enchiladas preheat oven to 350F. Spray a glass baking dish with non-stick spray and grab a pack of tortillas (8 inch). Take about 3 scoops of the mixture and dump on one end of the tortilla, then take the top of the tortilla and roll it forward so you are grabbing underneath the filling mixture. Then roll the tortilla until its tight, about 1-2" thick. Place on glass dish and bake at 350F for about 30 minutes. I typically add enchilada sauce on top and shredded cheese but I did not include this with the recipe so you can do it how you like.

Season / Spice as desired, this is just a guideline for a good mix! It works great as a dipping sauce too, just be sure to count whatever extras you use like the tortilla shells or chips and sour cream, etc.
