Quinoa and Delicata Squash

Ingredients
1 Delicata Squash1c. Quinoa1Tbs Raisins (optional)2 tsp Olive Oil2 tsp Red Wine or Balsamic Vinegar1/2 tsp Honey1 clove garlic
Directions
Cook quinoa in 2c water for 10 min. Add raisins and cook another 5 min. Let cool.

Cut delicata squash, seed, and cut into 1/2in half moons. Brush with 1 tsp olive oil and cook at 350 for 30 min or until tender.

Whisk together minced garlic, vinegar, olive oil, honey, and salt, pepper and herbs to taste.

Mix together and enjoy!
