Spicy Peanut Butter Noodles

8 oz Whole Grain Pasta1/4 c. smooth peanut butter1/4 c. seasoned rice vinegar1 Tbsp soy sauce2 to 3 tsp Sriracha chili sauce
Bring a large pot of water to a boil over high heat. Add a generous amount of salt and stir in pasta. Cook according to package instructions; drain and rinse well under cold running water.
Meanwhile, whisk the peanut butter, vinegar sauce and chili in a large bowl until smooth. Add the drained pasta and using tongs, toss until coated with the dressing. Serve immediately or chill in the refrigerator for a least 2 hours.
Note: If chilling noodles, toss with 1 to 2 tablespoons of water to loosen them before serving.
