Southwest Stuffed Yellow Peppers

Ingredients

2 Yellow Bell Peppers3/4 cup brown rice4 oz baked or poached chicken2 T low fat sour cream1/4 cup black beans1/2 cup chopped tomatoescumin, chili powder, salt to taste
Oven to 350 Degrees
Cut top off of each pepper.
Combine rice, chopped chicken, black beans, and tomatoes.
In separate bowl mix spices with sour cream.
Toss sour cream and rice mixture.
Evenly spoon into each pepper.
Top with parmesan (optional).
Bake on sprayed sheet or dish for 20-25 minutes.
