Crusted Catfish

Ingredients
1 cup onion, finely chopped 4 tablespoons honey Dijon mustard 1 Lb. fillets catfish fillets garlic power and pepper to taste dried parsley flakes
Directions
1. Preheat the oven to 350 degrees F (175 degrees C).
2. In a small bowl, mix together the onion and mustard. Season the catfish fillets with garlic salt and pepper. Place on a baking tray and coat with the onion and honey mustard. Sprinkle parsley flakes over the top.
3. Bake for 20 minutes in the preheated oven, and then turn the oven to broil. Broil until golden, 3 to 5 minutes. Makes 4 - 4 oz. Servings

    Loved it! Had to tweak the recipe a little because I didn't have honey mustard on hand. I used 3tbsp of just honey in place of the honey mustard and it came out great. My husband and I ate it all up and I had originally planned on leftovers! - 8/27/09
