1/2 cup brown basmati rice2 tsps sesame oil1 pound lean ground turkey1 tbsp ginger, fresh, minced1 lage red bell pepper, finely chopped1 can water chestnuts, drained and chopped1/2 cup low sodium chicken broth3 Tbsp hoisin sauce1 tsp five-spice powder1/2 tsp salt1 head of iceberg lettuce, separated into leaves.1/2 cup chopped cilantro, basil, scallions and mint1 cup shredded carrot
Makes 5 servings with 1 cups of filling each.
1. Cook rice as directed.
2. While rice is cooking, heat sesame oil in a saucepan over medium heat. Add ground turkey and cook until lightly browned. Add ginger and cook one more minute. Add rice, red pepper, water chestnuts, chicken broth, hoisin sauce, five-spice and salt. Mix well and cook for a few more minutes.
3. Put a spoonful of rice and turkey mixture onto a lettuce leaf, garnish with carrots, basil, mint, and/or cilantro and roll up.
