Spinach and Swiss Cheese Omelet

2 Eggs, beaten1 cup spinach - washed, chopped1oz Swiss Cheese1 tsp olive oil
Heat small frying pan over med-high heat.
Add spinach to pan and stir constantly until wilted. Remove and set aside.
Reduce to Medium heat - Add oil to pan - pour in eggs. Once eggs on bottom begin to firm - add spinach and Swiss cheese. Using spatula - lift one edge of eggs and fold over the top of the other portion. Cook for 30 seconds and flip to other side.
Remove from pan and serve immediately.
