Coconut Broccoli & Shrimp Stirfry

2 cups brown rice1 Tbsp. coconut oil1-2 lbs. frozen shrimp1-2 heads of fresh broccoli3 garlic cloves, peeled & minced1/4 - 1/2 cup of coconut milkJuice from 1-2 lemonsFresh cracked pepper & Sea Salt
Step 1 - Heat wok on med-low heat, add 1 Tbsp of coconut oil
Step 2 - Rinse & de-tail shrimp; make sure it is thawed out by rinsing in cold water
Step 3 - Boil water for brown rice, cook and set aside
Step 4 - Add shrimp to wok with garlic, sea salt & cracked pepper. Saute for 1 min.
Step 5 - Add chopped broccoli
Step 6 - Add coconut milk. Cook until broccoli is moist & tender.
Step 7 - Serve over brown rice or Quinoa
