4 filets Tilapia or other mild fish (3.5-4 oz. each)1 can dark red kidney beans, drained and rinsed1 large bell pepper, chopped fine1/2 medium onion, chopped fine1 cup frozen green beans2 cloves garlic, minced1 6 oz. can tomato pastesalt & peppercajun seasoninghot sauce (optional)
Preheat oven to 350. In a large bowl, mix kidney & green beans, onion, pepper, garlic, salt, pepper, cajun seasoning, and tomato paste (plus hot sauce if you like it).
On a baking sheet, lay a large sheet of foil flat. Pour bean and veggie mixture onto the middle of the foil. Place thawed fish filets on top, and season with salt, pepper, and more cajun seasoning.
Place another large sheet of foil on top, and tightly seal all four edges, folding and pinching the foil layers together. Bake for about 45 minutes or until the veggies are tender and the fish is done. Carefully open the foil packet and watch out for steam!
Serves 4 (1 filet and about 1 c. of the veggie mixture).
