Faux Chicken Curry

Ingredients
1 Package Morningstar Farms Chicken Strips meal starter1 Red Pepper, seeds removed sliced in strips1 Yellow Pepper, seeds removed sliced in strips1 Onion1 Cup Cherry tomatoes2 small red potatoes1/2 Cup Celery chopped8 tbsp Taco Bell Taco Sauce2 tbsp Olive Oil4 tbsp Curry Powder (we call it masala)1 tsp SaltRed Pepper to taste
Directions
Chop up all the vegetables. Spray a large skillet with Pam. Add the 2 tbsp of Olive oil, and the veggies that take longer to cook first: potatoes, onions, garlic, and celery. Saute for a few minutes, then add the spices. Add water so the veggies won't burn. Add the peppers, tomatoes and taco sauce. Simmer till veggies are softened.

While veggies are simmering, microwave the faux Chicken Strips for 1-2 minutes.

Put the entire package of Morningstar Farms Chicken Strips meal starter in the skillet with the veggies and toss together for a couple of minutes. Do not overcook the fake chicken or it will get yucky.

Serve with roti, or fajita sized lo-carb tortillas.
