Warm Winter-Vegetable Salad

Ingredients
small red onioncarrotparsnip12 oz celery rootsmall beetsmall sweet potato3 tablespoons olive oil1/4 cup toasted walnuts1/4 cup feta cheese1 1/2 teaspoon balsamic vinegar1 1/2 teaspoon lemon juice1/2 teaspoon dijon mustard2 tablespoons chopped parsley
Directions
peel and cut up all the vegetables, mix with 2 T olive oil and salt and pepper. Roast at 425 for 45 minutes.

Mix vinegar, 1 T olive oil, lemon juice, mustard and parsley.

Mix with vegetables, feta cheese and top with walnuts.

    This looks exactly like the salad on the Curvy Carrot's site - but I think it's supposed to feed 4, not one. I think if you're doing it as a side, you could possibly plan on 8, so the calories are better too. - 12/6/13
