Chicken Stir Fry

2 cups red peppers sliced1 cup red onion sliced1/2 snow peas2 chicken breasts (appx 1 lb) sliced into strips2 T soy sauce (use the low salt variety to reduce sodium content)1 tsp ginger1 cup low fat chicken broth
Prepare all ingredients as stated
Heat large skillet and spray with cooking spray
Add chicken slices and lightly brown
Add all other ingredients cover and cook until veggies are still a bit crisp and chicken is heated through.
Serve over Brown rice
Makes 3 One Cup servings over !/2 cup brown rice.
