Granola Bars with Cranberries & Almonds

2 tbsp prune puree2 tbsp canola oil2 tbsp honey1/4 cup applesauce1/2 tsp vanilla extract2 cups whole oats1/4 cup wheat bran1 scoop (28 grams) whey protein1/2 tsp baking soda1/4 cup Craisins, roughly chopped1/4 cup almonds, chopped
Makes 16 2" bars
Preheat oven to 350. Line an 8" square pan with foil and spray with oil.
Put all wet ingredients in a bowl and stir to blend.
Process oats until it is a slightly chunky flour. You should see some oat grains.
Add all dry ingredients to the bowl. Stir until thoroughly combined. It will be crumbly, but will clump if pressed.
Pour into prepared. Using wax paper or a silpat, press the mix flat into the pan. Bake 12-15 minutes until browning on the edges. I use a convection oven at 325, which is the equivalent of a standard oven at 350. Bars will be soft baked at 12 min. Bake 20-25 min at 325 if you want more of a crunchy bar.
Remove from oven. Carefully slide foil out of pan onto cutting board. Cut into bars while hot, then allow to cool. Store in an air tight container or wrap individually in plastic wrap and keep in the freezer. Makes a great snack or eat 2 for breakfast on the go!
