Mushroom Primavera Pasta Saunce

Ingredients
1 red onion, chopped2 tablespoon olive oil3 tbsp minced garlic8 plum tomatoes, chopped2 medium zucchini, grated2 medium carrots, grated1 medium green pepper, chopped1/4 cup water1/4 teaspoon pepper1 7oz bag frozen mushroomsGarden Delight Penne (not included in calories)
Directions
Prepare pasta as directed.
Steam frozen mushrooms in microwave safe dish with 1/4c water indicated. You will add both later.

In a large saucepan saute onion til soft. Add garlic, allow to mix one minute. Add all veggies and mushroom with water. Stir to combine, cover and cook on the lower end of medium heat for 20 minutes.

I served mine in half cups, but the husband eats in cups. Serve over equal amount pasta. Picture includes Rosemary Salmon.
