Ingredients
Directions
1 pound extra lean ground beef 1- medium onion chopped 1- bell pepper chopped 2- packages of Lawerys taco seasoning 1- can of diced canned tomatoes (no salt) 1- 16 oz can of pinto beans (drain water) 1- 16oz can of kidney beans 1- 16 oz can of red beans 1- tablespoon of non fat sour cream (optional) 1- 1/4 cup of krafts 4 cheese mexican (low fat optional) 2- tablespoons of medium salsa (optional ) 10 to 15 tortilla chips crushed (optional)
On medium heat toss in ground beef, onions and green pepper. Cook til ground beef is browned. Next pour in 1 package of lawerys taco seasoning stirring till it is mixed well. Then add all 3 cans of beans. I like to drain the water off one can of beans before I put them all in(it makes it thicker). Cook on medium heat bringing the soup almost to a boil. Turn it down to low and let simmer 5 mins. Its ready to eat. I like to crumble a few tortilla chips in the bottom of my bowl. 1 serving is about 1 1/2 cups of soup. I pour the soup over the chips. I then sprinkle a small amount of grated lowfat cheese on top. I add 1 tablespoon of nonfat sour cream. I then add 2 tablespoons of salsa. Enjoy!! This makes approx: 10 1 1/2 cup servings.
