Tuna Veggie Patty

Ingredients
2 (2 oz.) Cans of Tuna (water packed)2 Large Eggs1/2 Cup Cheeze Nips, crumbled1/2 cup torn baby leaf Spinach1/4 cup diced Celery1/8th cup diced Onion1 Jumbo Button Mushroom, diced1 Serving Smart Butter for sautee
Directions
Sautee Onions and Celery until hot, add Spinach and Mushrooms. Sautee until spinach wilts, then add Cheese Nips. Stir into mixture. Add Tuna and Eggs, then stir together. Divide into two patties with spatula. Cook each side until golden brown and crisp. Flip and cook other side. May be served hot or cold, depending on preference. Is great alone or with favorite mayo, relish or cheese topping.
