1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 2 cups Asparagus, fresh 1.5 cups Shrimp, cooked (small, or large chopped)0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 8 tbsp Maple Grove Farms of Vermont Fat Free Honey Dijon salad dressing 1 cup Tomatoes, chopped1 cup Yellow Peppers, chopped.75 cup Carrots, raw, shredded or julienned
Cook quinoa according to package directions.
Steam asparagus until crisp tender.
Cool both to room temperature.
Combine with rest of ingredients and chill at least 4 hours or overnight.
Makes approximately 8 1-cup servings
