Ropa Veja (Old Clothes)

Ingredients
1 lb flank steak1 tbsp olive oil1 cup chopped onions2 cloves garlic1/2 cup green peppers1 tbsp of cumin powder1/2 cup green olives1 cup cooking wine or 1 cup beef broth1 cup tomato sauceSalt & Pepper to taste
Directions
Cook flank steak in enough water to cover until tender. Remove and let cool but save the broth. Shred and set aside. In a large skillet pour in the olive oil, onions and green peppers and sauté until tender. Add the garlic and cumin sautéing them on low heat until tender about 2 minutes. Add green olives and tomato sauce cooking them for 2 to 3 minutes, then adding the wine and the broth from the meat. Add the meat back into the skillet, stir and heat. Add salt and pepper to taste. Cook rice as directed. Serve meat over 1/2 cup of rice.
