Berry Filled Cinnamon French Toast

3 cups of Shaw's Berry Medley6 slices Peppridge Farm Light 7 Grain Bread4 large eggs2 tsps vanilla extract2 tbsp fat free half and half1 tbsp cinnamon6 tbsp Stewar'ts Light Whipped Cream3/4 Maple Grove Farms Sugar Free Maple Syrup
Place the berry mixture into a sauce pan and heat until the berries are soft. Turn off heat.
Mix together the eggs, vanilla extract, cinnamon, half and half. Dip the bread into the egg mixture. Be sure to coat both sides and then place on a hot griddled sprayed with cooking spray. Cook 3-5 minutes on each side.
When the French toast is done cooking, place two slices onto each plate. Spoon berry mixture onto one slice of bread and then place the other piece of bread on top.
Drizzle with Maple Grove Farms Sugar Free Syrup and light whipped cream.
