Stir Fry Scallops

Ingredients
4 oz. Scallops, raw1 cup Frozen Mixed Vegetables, Oriental mix1 slice of onion, medium1 clove garlic1 Tbsp. olive oil1 Tbsp. low sodium soy sauce1/4 tsp. ginger, ground1/4 tsp. dry mustard
Directions
Prepare brown rice for serving with the dish.

Heat oil in skillet, add garlic and onion. Saute until transparent. Add frozen vegetables and stir fry until cooked slightly. They should be on the crisp side. Add scallops and saute briefly. Add soy sauce and spices. Serve immediately. Garnish with slices of orange.
