Tortilla Pinwheels

Ingredients
  • 4 whole wheat tortillas
  • 1/4 cup fat free cream cheese
  • 8-12 spinach leaves, washed and dried
  • 1/2 cup grated carrots
Directions
1. Let the cream cheese come to room temperature. Whip with a mixer, or by hand, to make it easier to spread.

2. Using a spatula or knife, spread about 1 tablespoon cream cheese on each tortilla, making sure to reach the edges.

3. Put several spinach leaves in the center of the tortilla and sprinkle with 2 tablespoons of carrots.

4. Roll tortilla tightly; secure with a toothpick.

5. Cut the tortilla into pinwheels by cutting it in half first, then making bite-sized slices along the tortilla until you reach the end. Lay each piece cut-side down on a serving plate.

    I used 1 Tbs of ww cream cheese and a salmon and used muchrooms and yellow peppers and it was really good and only had , counting the tortilla, 200 calories. With a salad, a perfect lowfat lunch - 1/28/09

    This recipe gives a nutritiouts and low cal alternative to one with white tortillas and gobs of cream cheese. Mixing it up with salsa, thinly sliced tomatoes, onion or whatever chopped fruit or vegetables (just a little) gives endless possibilities. Great recipe! Thanks! - 6/19/09

    This was a big hit at a Christmas Party, however, I put the carrots on the cream cheese and then the spinach. This gives the carrots something to adhere too and they do not fall out when your guests pick them up to eat. It also was very good with some finely chopped jalapeno chiles in them. - 1/19/09

    I've found a wonderful square bread, Joseph's Lavash bread, at BJ's (like a Sam's Club) and I believe our WalMart used to carry it. Only 100 cal for a whole sheet. Also the Laughing Cow makes a great spreadto use for flavor instead of the cream cheese. A very filling lunch or snack. - 8/27/09
