1 lb/ 2cups cooked chicken, skin removed, cut into bite-sized pieces12 oz broccoli slaw/cabbage shredded1 cup carrots, grated2 tablespoons cilantro, chopped1 cucumber, thinly sliced3 green onions, thinly sliced1 mandarin orange, divided into sections or orange juice to taste1/2 cup no-fat Asian or Oriental-style salad dressingBlack pepper

Directions:
1. In a large bowl, combine chicken, broccoli slaw/cabbage, carrots, cilantro, cucumber, and dressing. Toss well.
2. Top with green onions and mandarin orange sections. Pepper to taste.
