Easy pumpkin muffins

Ingredients
One box of spice cake mixOne small (15 oz) can of 100% pumpkin
Directions
Add cake mix to bowl. Add pumpkin to cake mix. Stir. DO NOT ADD oil, egg, or other ingredients listed on the back of the cake mix box. Only add the cake mix powder and the pumpkin.

Pour into lined cupcake tin. Cook as directed for 24 cupcakes (or however many you have).

Makes 24 muffins. Serving size on box is 1/12 of box, so serving size should be two muffins. Delicious and moist even plain.

    I tweaked this recipe adding 2 egg whites (protein), 1.25 c water, 1/2 c dried blueberries & 1/4 c walnuts (fiber & texture). I figured out the nutritional info myself & got 228cals, 5g fat, 2.5g fiber for each of 12 lg muffins. Don't think info in box above is correct! - 5/7/08

    I added pumpkin pie spice to mine and only made 12 big muffins. My 4 year old niece ate one and asked for another so I know they're good. - 9/10/08
