North Dakota Knoephla Soup

Knoephla: 3 C Flour 1.24 Tsp Baking powder, 1 Tsp SaltSoup:4 cups water2 cups light chicken broth2 Tsp mrs dash garlic herb seasoning1 Tbsp black pepper2 Tbsp garlic/salt grinder1.25 cup chopped carrots2 cups diced yellow potatoes3 small white onions, diced or sliced
Mix up the flour, salt and baking powder, and slowly add the 1 cup of milk and make a stiff batter. Roll into 1/2 inch ropes, and cut into bite size chunks.
Mix up all the other ingredients except remaining 1 cup of milk and let simmer for 20 minutes.
Add the knoephla dumplings and remaining milk and simmer for about 30-40 minutes until dumplings are cooked.

OMG!! I was delighted to see this! Being from ND (but now live in NC). I make this for friends all the time and they LOVE IT!!! Your version is a little healthier than mine. I add crm of chckn soup to make it creamier but skip milk. I make this after Thanksgiving with extra turkey meat!!! - 3/31/11
