Chicken Tortilla and Rice Soup

Ingredients
2 Cups Minute White Rice, Uncooked5 Cups Low-Sodium Chicken Broth1 Cup Carrots, Peeled and Sliced, Thin1 Can (10.5 ounces) Diced Tomatoes & Green Chilies (Rotel)1 Cup (6 ounces) Cooked Chicken Breast, Cubed1 Tbsp Lime Juice (Optional)Add on Items:Baked Tortilla Chips, Slightly CrushedShredded Low-Fat Mexican Cheese1/4 Cup Chopped Fresh Cilantro1 Avocado, Diced (Optional)
Directions
Prepare rice according to package directions.

Bring broth to a boil in a medium saucepan. Reduce heat and add carrots, tomatoes and green chilies and chicken; simmer 10 minutes.

Stir in Rice; add lime juice if desired. Divide equally into 6 serving bowls and twp with tortilla chips, cheese and cilantro and avocado, if desired. (Not included in calorie count).
