Morning Glory Muffins

2 cups all purpose flour1 1/4 cups white sugar2 tsp baking soda2 tsp ground cinnamon1/4 tsp salt2 cups shredded carrots1/2 cup raisins1/2 cup chopped walnuts1/2 cup unsweetened coconut flakes2 4-oz servings of Motts applesauce, or 1 cup applesauce3 eggs1/4 cup vegetable oil2 tsp vanilla extract
1. Preheat oven to 350 degrees F. Grease 12 muffin cups or line with paper muffin liners.
2. In large bowl, mix together flour, sugar, baking soda, cinnamon and salt. Stir in carrots, raisins, nuts, and coconut.
3. In separate bowl, beat together eggs, oil, applesauce and vanilla. Stir egg mixture into flour mixture, just until moistened. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 20 minutes or until toothpick inserted into center of a muffin comes out clean.
Serving Size: makes 12 mid-size muffins
